Summertime….and the living is easy. Seriously, life seems to slow down during summer. Maybe it’s because it’s so hot and nobody wants to move quickly, but I’ll take it. Especially in the city that never sleeps, it feels good to have these long slow days. Lately I’ve been cooking and baking with a lot of fresh fruit and vegetables, because ’tis the season and all. And I may have gone overboard with the rhubarb. It’s one of my favorites and since it’s only in season for a small time frame, I go HAM and but a lot of it and try to bake or freeze it as quickly as possible. I made a Strawberry Rhubarb Skillet Crumble as a “just throw something together before it goes bad meal” and it was great! Don’t you love those moments?!?
I’ve been so busy lately with work that it feels great to have an actual weekend and be able to both relax and cook. It feels like all spring I was either traveling or buried in work and the blog definitely fell behind. But it’s back and better than ever! And there’s so many new ideas and things that I am so excited to try out soon!
One of the things that I am really excited about right now are all of the new marvel movies coming out. I know, NERD ALERT, but at the same time they are darn entertaining. And can I just say how bada$$ was the Black Panther trailer?!?! That’s the movie I’m most excited for. Between the director, the awesome cast, and even using Run The Jewels in the trailer, I have super high hopes for that movie (and Michael B Jordan is in it!!!). Hopefully between Spiderman Homecoming, The Defenders, Thor Ragnarok and Black Panther we will have an entertaining year.
But back to the food right? I mean that’s why you’re here, for the food and not my incoherent ramblings. 😉
One of the best parts about this recipe is that since it is a skillet dessert, you could easily make it than take it to the couch and eat it while Netflix binging some tv or movies (ok we are back to the food but haven’t left geek territory). But in all seriousness cooking dessert in a skillet is easy and absolutely delicious! If you are in the market for a skillet I highly recommend Lodge (I’m not paid to say that, I’m just a huge fan!!!). They are easy to take care of, budget friendly and are made of good quality cast iron. The only thing better in my experience is a well taken care of old cast iron that is seasoned beautifully. But those are hard to come by!

Strawberry Rhubarb Skillet Crumble
- 1 1/2 Cups Strawberries Sliced
- 3/4 Cup Rhubarb Chopped
- 1/2 Cup Sugar
- 2 Tbsp Cornstarch
- 1/2 Cup Flour
- 1/2 Cup Brown Sugar Packed
- 1/2 Cup Butter Diced
- Preheat oven to 375
- Combine strawberries, rhubarb, sugar and cornstarch. Toss to coat. Spread fruit mixture evenly in an oiled cast iron skillet.
- Combine flour and brown sugar. Cut in cold butter. Combine until it forms pea sized clumps and is sticking together.
- Sprinkle topping on top of fruit.
- Bake for 25-30 minutes or until fruit juices are bubbling on the sides and topping has turned a golden brown. Let cool slightly, then enjoy!
