Strawberry Cream Cupcakes

Cupcakes seem to be all the rage right now and up until recently I was a stubborn hold out on the craze. And then came along Strawberry Cream Cupcakes. And now, I am a proud convert.

Strawberries are one of my favorites so I was SO excited to use them with my baking. And Tai loved this recipe a lot (and has been bugging me for a while to post it).

On another note, you may notice that my frosting looks a little goopy. That’s because the day I made this, it was 95 degrees out, wicked hot in my kitchen and it was before I had an electric mixer…which meant I had to whisk everything by hand…which is very hard…and which I don’t recommend 😉

Ingredients
  

Batter

  • 1 3/4 Cups Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 Stick Butter
  • 1 Cup Sugar
  • 2 Eggs
  • 2 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/2 Cup Milk
  • 1/2 Cup Strawberries

Frosting

  • 1 Cup Heavy Cream
  • 1/3 Cup Confectioners Sugar
  • 1/3 Cup Strawberries
  • 1/2 tsp Nutmeg

Instructions
 

Batter

  • Preheat oven to 350. Combine flour, baking powder and salt together in a bowl and set aside
  • Beat together butter and sugar until fluffy. Add slowly eggs, vanilla, cinnamon, milk and pureed strawberries.
  • Combine dry ingredients to the wet ingredients by slowly stirring together in small batches. Spread batter evenly between the cups of the pan and bake for 18-20 minutes or until cooked through. Let cool completely, then remove from pan.

Frosting

  • Combine heavy cream, confectioners sugar, pureed strawberries and nutmeg. Using a mixer, mix until stiff peaks form. Put frosting into a piping bag and pipe onto the cupcakes. Decorate as you please and enjoy!
