What in the world do you do with leftover chicken? Oh and it has to be for lunch the next day. Sound exciting yet? Well it is, especially when it’s combined with scallions! Ok, scallions don’t have a lot of recipes featuring them –they are usually a garnish and not a focal point of a dish. So let’s change that. Welcome Scallion Chicken salad, a twist on the classic chicken salad that your mom probably made for you in grade school.
Well this Scallion chicken salad elevates and brings a new taste to this classic lunch. By cooking the scallions, you get a very sweet note. By sautéing them in soy sauce, you get this great salty/sweet combo that pairs well with the chicken. Tai happily ate it for lunch, and has already asked when I’ll make it again. That means it’s a recipe well done.
Scallion Chicken Salad
- 1 Cup Cooked Chicken
- 1/2 Cup Scallions
- 3 Tbsp Mayonnaise
- 3 Tbsp Soy Sauce
- 2 Slices Bread
- Dice the chicken and set aside. Slice the scallions and put them in a small frying pan.
- On a medium-high heat cook the scallions until they begin to wilt. Add the soy sauce and cook until the scallions are cooked through.
- Add the chicken an toss to coat the soy sauce. Cooked until chicken is warmed through and then remove from heat.
- Pour scallion chicken mixture into a bowl and combine with the mayonnaise. Spread over your choice of bread and garnish with some scallion greens or lettuce. Enjoy!
