Fall is the season of apple picking, pumpkin carving, wearing sweaters on a chilly day, long rides out to the countryside to see the folliage and most importantly FOOTBALL. I grew up in what is possibly the best era of sports for New England, the Belichick Dynasty and the Tom Brady empire. I may live in NYC now but I am a New England sports fan until I die. To celebrate the Pat’s recent win, I decided to make the perfect Tailgating food, Saucy Beer BBQ Meatballs.
When I was a kid, all things would stop for football. We had to be home in time for the game and if by some strange circumstance we weren’t, it was to be taped or listened to on the radio. It would be devastating to miss it. We usually didn’t do much for food, maybe order a pizza here and there for regular season games. But when it came time for the Super Bowl we go ALL out. That’s game day food at its best.
But this recipe should not be saved until February. It should be eaten right now! I used my favorite beer for this recipe. Any type will do, though I’d stay away from extra bitter beers because it might taste a little too bitter even when cooked. I really like how this recipe is a quick and easy one. Dump it in a pot and go! You’ll have food in no time!

Saucy Beer BBQ Meatballs
Ingredients
- 1 Pound Frozen Mini Meatballs
- 1 12 Oz Bottle of Beer
- 2 Cups BBQ Sauce
- 2 Cloves Garlic Minced
- 1 Tsp Chili Powder
- 1 Tbsp Cornstarch
- Pepper to Taste
Instructions
- Place all ingredients in a large saucepan. Bring to medium-high heat. Let cook for 3-5 minutes
- When sauce begins boiling reduce heat to a simmer. Let cook for 20 minutes or until sauce has reduced and meatballs are cooked through.
- Serve individually on toothpicks or in a sandwich, enjoy!
