It’s days like this that i long for summertime weather. Where it’s sunny and warm, and I can leave the house without putting on multiple layers. Even summertime food is better. Nothing beats meat cooked on a grill and BBQ is truly the best in the summer. So while I’m dreaming away, I’ll make do with a Saucy BBQ Meatloaf to remind me of summer flavors.
My boyfriend LOVES barbecue sauce; he will put it on just about anything. It doesn’t matter what I make or how much I season it. He will ask for the BBQ sauce anyways. So when I made this meatloaf he was, as you can imagine, in heaven. Not only is meatloaf such a “guy” meal but add BBQ and he will be right there.
We never ate meatloaf in my house when I was growing up. I remember one attempt by my mother that turned out disastrous. It was one of a few meals that she has ever made that really didn’t turn out well. I remember all of us at the dining table one by one stop eating the meatloaf and quietly eating our vegetables instead (and when you have kids, there’s your sign!). However one person was a huge fan of it, My sister’s friend Mackenzie who was over for dinner that night. I’m pretty sure she had seconds.
I would consider this first attempt at meatloaf a total success! We ate it with mashed potatoes and corn, another reminder that barbecue is a summer flavor right? What’s your favorite winter BBQ dish? Let me know in the comments section below!
Saucy BBQ Meatloaf
- 2 Pounds Ground Beef
- 3/4 Cup Bread Crumbs
- 1 Onion Finely Diced
- 1 Egg
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1/2 Tsp Italian Seasoning
- 1 Cup BBQ Sauce
Preheat oven to 350.
Combine ground beef, bread crumbs, onion, egg and seasonings. mix together until fully combined.
Transfer to a shallow baking dish and form into a loaf shape.
Brush BBQ Sauce over top of meatloaf.
Bake for 55-60 minutes or until firm and set. Let cool for 5-10 minutes before serving.
