Recently Tai and I went out to dinner at a swanky Brooklyn restaurant. It was gorgeous; we were seated outside in the garden where there were string lights, grape vines and flowers everywhere. It was the ideal romantic spot. The food was amazing but the thing that we remember now, a couple of weeks later, is our appetizer, a plate of roasted garlic, goat cheese and crispy chips.
After our date night we kept going back to that dish and I kept thinking “well, I could do that!” And so I did…and I have, and it has both smelled and tasted amazing!
Roasted garlic is SO easy to make and it’s great spread on crackers or mixed into dishes like mashed potatoes. We recently had it with a steak dinner and it was beyond tasty. So here is my basic recipe for roasted garlic. Let me know how you end up using it!

Roasted Garlic
Roasted Garlic is a kitchen basic that will impress everyone! Transform garlic into a delicious side or topping for meats and sides.
Ingredients
- 1 or More Heads of Garlic
- olive oil
- Salt
- Pepper
Instructions
- Preheat oven to 400. Peel any loose paper away from the head of garlic, making sure to keep the head in tact
- Trim the top off the head of garlic, just enough to expose the cloves.
- Drizzle in olive oil and season to taste with salt and pepper. Wrap in aluminum foil and place in the oven. Cook for 45 minutes or until browned and soft.
I have such fond memories of stuffing my face with roasted elephant garlic and crusty bread at a swank restaurant in DC when I was in college. This was always accompanied by several bottles of red wine and paid for with a credit card. Ah college….
