It’s that time of year again, tomato season!!! The farmer’s market was absolutely full with tomatoes when I went on Monday. So obviously I bought as much as I could carry and have been making tons of veggie based recipes all week, much to Tai’s dismay (he is a fully fledged meat eating man, though he was vegetarian for two years when he was younger!!). So what better way to use tomatoes than pizza?
Here in NYC we are spoiled when it comes to pizza. Not only is it sold on almost every corner, but most of it is delicious! Nothing beats dollar slices on the go and how crispy and fresh the pizza tastes. Now my pizza is like the farmer’s market meets NYC pizza. First off, it doesn’t have a sauce, which is why I call it a flatbread. But it has soooo much flavor and gooey cheese, you honestly won’t miss the sauce. The tomatoes as they cook down have a similar taste too!
I’m such a fan of easy and quick recipes right now. It’s so hot out when I get home that I just don’t want to turn on the oven and if I do I only want it on for a few minutes. This recipe has food on the table in less than 30 Minutes!! And it definitely gives NYC pizza a run for its money. I suggest eating this pizza fresh from the oven and drizzling a bit of olive oil on top. You will NOT regret it!
Tomato and Parmesan Flatbread
- 1 Premade Pizza Dough
- 2 Tbsp Olive Oil
- 4 Cups Grated Parmesan
- 1/2 Cup Basil
- 2 Cups Tomatoes Sliced
- 2 Cloves Minced Garlic
- Preheat oven to 425.
- Take pizza dough and spread it out on a greased baking sheet. Brush with olive oil.
- Sprinkle parmesan over dough. Top with basil, tomatoes and garlic.
- Season generously with salt and pepper.
- Bake for 12-15 minutes or until crust is golden and cooked through.
- Let cool slightly, and enjoy!
