I never tried tetrazzini until I went to college. It just wasn’t a recipe my family made and not one common in our area. Every Thursday night, the late night dining hall would have a pasta night and it was honestly some of the best dining hall food (the absolute best was the Taco Tuesday food). There was a whole buffet filled with different types of pasta and tetrazzini was always one of them. It was soooooo good, which is not something you’d every hear about dining hall food. Fast forward five years and here I am making my own version of Easy Leftover Ham Tetrazzini with some leftover ham I had in the fridge. And you know what? It’s even better 🙂
You can make all types of tetrazzini. The most common of course are chicken tetrazzini, turkey tetrazzini and I’ve even seen salmon tetrazzini. Honestly you could use this recipe as a base for the sauce and change out the protein. So many types will work well because this creamy sauce is everything and goes well with pretty much everything. My hack for a creamy sauce? Use cream of chicken for both the flavor and cream.
How to use up leftover Ham (Make Tetrazzini!)
I’m trying really hard this year to use up all of my leftovers. Sometimes that means freezing them to eat later and other times that means repurposing them so I don’t get bored. There’s nothing worse than having a big dinner than having to throw a significant part of it away. I try to be inventive with my leftovers like with this leftover ham recipe. My freezer may now be full of tupperware containers, but hey, I have lunch for weeks on end hahaha.
