Leftover Ham and Pineapple Bites are the perfect holiday treat!
Between having guests over for post Christmas gatherings, Football and New Years Eve coming up, you’ll be in need of some top notch recipes for entertaining. Better yet? Recipes that are using items that you already have in your fridge, such as that Christmas ham. I made my Leftover Ham and Pineapple Bites with that in mind. They are a quick appetizer that can be thrown together for company, even when they swing by unexpectedly.
Ham and pineapple is such a classic combination. And I know why, because it’s SO darn good! This recipe calls for caramelizing the pineapple and ham in butter and brown sugar, which is delicious in and of itself. I added some seasoning to give it a little kick. But if you want more of a kick, feel free to add chiles or peppers to the mix and it will taste great!
Lately we’ve been watching a lot of football. This is the time of year when it really gets interesting as we get closer to playoffs and the Super Bowl. We hope on hosting a Super Bowl party this year and I’ve already begun testing out some recipes. Because you know me, I have to blog about EVERYTHING. Tai can’t complain, he’s getting fed delicious food too 🙂

Leftover Ham and Pineapple Bites
Ingredients
- 1 Cup Leftover Ham Cubed
- 1 Cup Pineapple Cut
- 1/2 Cup Brown Sugar
- 2 Tbsp Butter
- 1 Tsp Paprika
- 1 Tsp Chili Powder
- 1 Package Frozen Puff Pastry
Instructions
- Bake puff pastry cups as according to directions.
- In a medium-sized frying pan, bring pineapple to a simmer. Add ham and stir in brown sugar and butter.
- Season with Paprika and Chili Powder.
- Cook until pineapple has caramelized, about 5 minutes.
- To serve, spoon pineapple mix into the prepared puff pastry cups. Enjoy!
