One month since we left Brooklyn, three full weeks in California have now come and gone and life is starting to fall into a routine. Our boxes are unpacked, furniture built and the obligatory stressful trip to Ikea has been made twice. For both Tai and myself, we are almost at a moment where we can relax and breathe. For me, that means going to the farmers market and starting to cook/bake/blog again. And why not start with a gorgeous recipe for Honey Roasted Figs with Burrata.
I quickly discovered that farmers markets in California are a different beast. The market I chose to go to was in the cozy seaside town of Half Moon Bay. The market was much smaller than the market I would visit in NYC but the variety and quality of the produce in Half Moon Bay was unparalleled. Fresh grapes picked that morning, giant artichokes, gorgeous brussels sprouts and perfect figs.
Fresh figs were hard to come by in NYC. They don’t travel well and go from perfect to soggy brown mess in an instant. I was super excited to see figs and knew I had to make something delicious with them. So Honey Roasted Figs with Burrata was created.
Burrata is one of my favorite cheeses. It’s like the perfect combination of a pillowy soft mozzarella and fresh cream. It’s the cheese to have with a seasoned sweet fig for sure. I coated the figs with a bit of honey and some seasonings, roasted them and then spooned figs and liquid over the burrata and dug in.
While we are settling in, we are still hoping that Tai finds a job that suits both his skills and interests. We’ve had quite a few almosts but nothing has been solidified yet. But we are holding out and hoping it will all work out soon! Of all places to look for a job in the video game industry, the San Francisco bay area is a good place to be. I keep telling him to try to get on the new star wars game, but that motivation is more so to feed my inner star wars nerd 😉
With only a few weeks of being a Californian I can tell that I already really like it and can’t wait for our many new adventures to come!
Honey Roasted Figs with Burrata
- 1.5 Pounds Figs
- 1/2 Cup Honey
- 2 Tsp Cinnamon
- 1 Tsp Cardamon
- 8 Oz Burrata Cheese
- Preheat oven to 400.
- Halve figs and place in an ovenproof baking dish.
- In a small saucepan, combine honey, cinnamon and cardamon. Heat on low-medium heat and stir until sauce has loosened and seasoning is fully combined.
- Pour honey mixture over the figs. Place figs in the oven and bake for 15 minutes or until cooked through.
- Slice burrata and place figs on top. Spoon sauce over burrata, then enjoy!
