I have never known scallions to be anything other than a almost forgotten garnish, usually as a last minute addition to some nachos. I decided to experiment and make grilled scallions as a side dish to our steak dinner. Could they hold up to a steak dinner? Or will they forever be only a garnish?
Well my friends, I discovered that grilled scallions are both delicious and totally awesome as a side. I think we need to start giving scallions some more credit.

Grilled Scallions are an easy side that works well with beef and chicken. Let scallions be a garnish no more and become a proper side dish!
- 1 Bunch of Scallions
- olive oil
- Trim the root ends and tops of the scallions. Brush with olive oil and season generously with salt and pepper.
- Place the scallions on a medium-high set grill pan and cook until marks begin to appear. Rotate the scallions and cook until the opposite side also has grill marks, then plate and serve!
