For those of you who follow my blog, you’ll know that cookies are my all-time favorite dessert. Seriously, I probably have more cookie recipes on my blog than anything else! Cookies are to me the pinnacle of something that’s perfectly sweet to eat, chocolatey and whatever flavors you want. It can all be added to a cookie. I made a wonderful Gooey Giant Chocolate Chip Skillet Cookie.
If you read my blog then you also know how much I love using cast iron pans. So this recipe for Gooey Giant Chocolate Chip Skillet Cookie really combined my two absolute favorite culinary things. You can try out this recipe with any cookie recipe but just keep in mind that skillet is usually a lot smaller than a full cookie recipe. You can either adjust that portions or freeze the extra dough for later (which I highly recommend!).
Skillet cookies takes a bit longer to bake because it’s thicker than average cookie. You want to get a crispy outside and gooey center. Cookies are the best when they are soft in the center! I love eating them warm so that the chocolate is still soft and warm. But to be honest, I’d never turn down a cookie.
When I made this with Tai, we had ice cream on top and it melted right into the cookie. It was a really really delicious treat for us because we both just grabbed some spoons and started digging into the cookie and just eating as much of that would like. The hot cookie and ice cream at the same time was great. Like I can’t describe how great it was because in a flash it was gone!
I’ve seen a lot of other cookie recipes for skillets and I was just really really intrigued to try one. I’m really happy I did because it’s a recipe that I keep going back to. No matter how many times I’ve made it, I keep going back to it. It’s definitely a guilty pleasure of ours.
If you don’t have a cast iron pan, I highly suggest getting one because they’re so versatile. You can use them for baking cookies like this. You can use them for frying eggs. The possibilities are endless! It’s been one of my favorite kitchen investments!
Gooey Giant Chocolate Chip Skillet Cookie
Ingredients
- 6 Tbsp Butter
- 1/3 Cup Brown Sugar
- 1/2 Cup Sugar
- 1 Egg
- 1 Tsp Vanilla Paste
- 1 Cup Flour
- 1/2 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 Cup Chocolate Chips
- Ice Cream (Optional)
Instructions
- Preheat oven to 350. Oil skillet and set aside.
- Combine butter and sugars until light and fluffy. Stir in egg and vanilla paste.
- Mix in flour, baking soda, and salt. Combine until fully mixed through.
- Fold in chocolate chips.
- Press cookie dough into skillet so that it evenly coats the pan.
- Bake for 20 minutes or until edges have turned golden brown and center is just set. Let cool, then enjoy!
