Gnocchi has become on of my favorite meals. It’s easy to make either from scratch or from store bought and the possibilities are endless. I love creating a new twist on this dish every time I make it. That’s why I have so many gnocchi recipes on my blog! This time I decided to make a Gnocchi and Sausage with Cream Sauce with sweet Italian sausage and a parmesan cheese sauce. And OMG it was good! It was one of those meals where even the leftovers get eaten quickly!
Making gnocchi from scratch is a fairly easy process. I’m still wary of making regular pasta from scratch but gnocchi is made from just a few ingredients; russet potatoes, ricotta, egg, flour, salt and pepper. Then it is kneaded until some gluten develops, rolled, sliced, rolled and cooked. All in all, it’s a quick process for a delicious pasta dish. I’ve also found some great store bought varieties of gnocchi, and those seem to be becoming more common too.
We aren’t quite in Spring yet. That darn groundhog lied to us and even as I write this post we are having a blizzard in NYC. This makes bikini season seem so much further away and now I have another excuse to eat richer, fuller meals. Hey those meals are the ones that keep you warm all winter long! I honestly don’t care about my bikini body as long as I’m warm when it’s blizzarding outside 😉
Lately I’ve been obsessed with making sauces for dishes. Maybe it’s because it’s winter but I’ve been making my own sauces over using the store bought or canned varieties. While it is a bit more work, homemade sauces taste soooo much better and aren’t that hard. This creamy cheese sauce was whipped up in a few minutes and seasoned with plenty or garlic. Don’t believe me? Make a sauce and try it on your own!
So while it is blizzarding out today, I’m dreaming of going on a vacation. Somewhere tropical and warm! Tai and I have actually never been on a vacation just by ourselves and we’ve been together for 3 years. All of our vacations have been some sort of family vacation. Don’t get me wrong, I’m really grateful for them and we honestly wouldn’t have been able to go on vacations without that, but i think we’re ready to have some time to ourselves. Gnocchi and Sausage with Cream Sauce
- 12 Oz Gnocchi
- 2 Tbsp Olive Oil
- 16 Oz Sweet Italian Sausage
- 1 Cup Kale
- 1 Tbsp Flour
- 2 Cups Milk
- 1/2 Cup Heavy Cream
- 1/2 Cup Shredded Parmesan
- 2 Cloves Garlic
Cook gnocchi in salted boiling water until they float to the top, 2-3 minutes, Drain, toss with olive oil and set aside
Slice sausage and cook in in a large pan on medium-high heat. Add kale and cook until softened.
Stir in flour, milk and heavy cream and bring mixture to a simmer. Stir in cheese and garlic. Season with salt and pepper to taste.
Cook until sauce has thickened, then fold in gnocchi. Enjoy!
