Hello and happy Monday! I don’t know about you but I’m ready to start this week off strong. This past weekend was filled with binge watching Westworld and Community, which translates to not having the most productive weekend. I did manage to go to Target twice…which also translates to not having a productive weekend lol. BUT while there I did manage to get some groceries and make a few things for the blog, so somewhat productive right? I made Chicken Breast with Roasted Tomatoes and Garlic and it was A+
This recipe is easy to prep and done in about 30 minutes. I just made the chicken and tomato garnish, but this would also go well with pasta or rice. We ate this with a baguette as well, which was perfect for mopping up all of the extra seasoned olive oil. The best way to eat this dinner is to grab a bit of everything on your fork and taste it all together, this isn’t a dish to pick apart.
I recently took a poll on my Instagram page and asked if people were sick of all of the cat pictures I’ve been posting on Instagram. Thankfully the answer was a no, so I get to keep sharing pictures of my little weirdo on Instagram! I love how cats have very different personalities and with our kitten Arya, her personality is really coming out now. When we first got her she had a lot of health problems so she was very shy and didn’t have the energy to even play. Now she’s bouncing off of the walls and doing parkour off of the couch. And she just does weird things, which all cats do to some extent, but she’s the weirdest cat I’ve ever met!
I have to say that California is spoiling us. Tai and I are used to the cold frigid winters in New England/NYC so having a sunny 65 degree in January is still surreal to us. I won’t lie, we went to the beach on New Years and sent pics to our family. It might have been a bit mean since it was below 0 in New England then, but when the weather is so perfect here, how can you not share it?
