Who can say no to a delicious plate of pasta? Lady and the Tramp certainly had the right idea for dinner date food. Even when staying in, I love making a pasta dinner because it’s simple to make, absolutely delicious and with a recipe like this, romantic too. I made Buttery Artichoke and Kale Pasta recently and it was delicious!
I don’t know about you, but I rarely cook with artichokes. I don’t know why because they are delicious! I really love using fresh artichokes but depending on the season they might not be available. Canned artichokes are a great substitute, especially when you cook them in a way that removes the “canned” flavor. My secret? Cooking them in olive oil, seasoning generously and slathering them with butter. It completely covers the canned taste!
This is totally an aside but don’t artichokes look like some plant from the time of the dinosaurs? They just look odd and prehistoric. It makes me wonder what proto human looked at it and thought “hmmmm that looks good to eat” because if I discovered it, I wouldn’t know what to do with it!! But I am so glad that someone discovered it and figured out how delicious it is!
Anyways…getting back on topic. If you want a delicious and quick meal this is the one for you!!! Nice segue, I know. But in all seriousness I really REALLY liked this dish I know some Italian grandmother is cursing me out somewhere because it’s not authentic, but hey it’s still delicious. And doesn’t American food draw from multiple cultures to create its own unique dish?

Buttery Artichoke and Kale Pasta
Buttery Artichoke and Kale Pasta is a quick and easy dinner!
- 16 Oz Spaghetti
- 1 Tbsp Olive Oil
- 2 Cloves Garlic Minced
- 1 1/2 Cups Frozen/Canned Artichoke Hearts
- 1 1/2 Cups Kale stems removed, chopped
- 1 Tsp Crushed Red Pepper
- 3 Tbsp Butter
- 1/2 Cup Grated Parmesan
Bring a pot of water to boil and cook spaghetti until al dente. Drain and set aside. Toss with oil or butter.
In a large pan on medium-high heat, combine olive oil, garlic and artichoke hearts. Cook until artichokes have browned.
Add kale and cook until softened.
Season with crushed red pepper, salt, and pepper.
Add pasta and mix in butter. Continue stirring until butter melts and pasta is evenly coated.
To serve, top with grated parmesan. Enjoy!
