You guys! Spring is here!!! There were daffodils blooming on my street, which are the official sign of spring. There were even fresh veggies at the Farmer’s Market, which is the truest sign that spring is here to stay and that there won’t be any more freak snow storms (hopefully!). With fresh produce starting to come into our lives again, I decided to make a dish with my favorite spring vegetable, asparagus. Hello Brown Butter Parmesan Asparagus!
Asparagus can be tricky to cook. It doesn’t take to seasoning well and it can easily be overcooked if not taken off the heat soon enough. But what I found with asparagus is that it goes great with sauces. I made a quick browned butter, one of my favorite sauces, seasoned it with lots of garlic and topped it with parmesan cheese. Simple? Yes. Tasty? Absolutely!
I used to be a super picky eater, as in no vegetables would ever be on my plate. Needless to say, I really like them now. But it didn’t mean that I learned how to cook them perfectly right away. Oh no, Tai and I had to endure some horribly mushy, overcooked and burnt vegetables on the way. You’ve never hated asparagus as much as I did when I burnt it in the oven. Oh well, live and learn 😉
The last asparagus dish I posted on the blog was from a long time ago, I made a Bacon Wrapped Sweet and Salty Asparagus . That dish was rather indulgent (but hey, bacon really does make everything better), this dish is a lot cleaner and can easily be paired with any protein. Or you could just have it by itself, which is what I did and it was totally delicious!

Brown Butter Parmesan Asparagus
Brown Butter Parmesan Asparagus is the perfect vegetable side dish for spring!
Ingredients
- 2 Pounds Asparagus Ends Trimmed
- 3 Tbsp Butter
- 3 Cloves Garlic Minced
- 1/4 Cup Parmesan Cheese Shredded
- Salt
- Pepper
Instructions
Heat butter in a large skillet on a medium-high setting. Cook until butter has browned.
Add asparagus and reduce heat to low. Add minced garlic and season with salt and pepper to taste.
Cook until asparagus has softened and turned bright green. Top with parmesan cheese and enjoy!
Not a fan of asparagus but if I was going to make it, I would use this recipe. It looks delicious.
