Broccoli Rabe and Shallots is a quick and easy spring side to add to your repertoire. It’s no frills, just focusing on the amazing flavors of the food. Sometimes you don’t need to complicate a dish to make it a good one.
Broccoli Rabe and Shallots
- 1/2 Cup Shallots
- 2 Cups Broccoli Rabe
- olive oil
- Slice the shallots and trim the broccoli rabe to 2 inch sections, discard any thicker bottom sections of the broccoli. Place in a medium pan, season with olive oil, salt and pepper and cook at a medium-high heat.
- After about 15 minutes your vegetables should be good to go. Finish with a sprinkle of fresh herbs or serve as is.
