There are on many occasions where friends and family have a barbecue or cookout and forget to have a vegetarian option. Potato salad is delicious, but can’t count as a meal (it’s too much mayo anyways). I recently saw a video on Bon Appetit for a BBQ beer can cabbage and thought both how ridiculous that was but also how amazing it is at the same time. Why not? I liked the video so much that I made my own version, a BBQ Oven Roasted Cabbage (no room for a grill in Brooklyn!) and even for us meat eaters, it turned out great!
I may be predisposed to like cabbage more than others because of my polish roots, but even my not polish (english/irish) boyfriend loved it. I mean, he loves BBQ everything, so it was definitely playing to his tastes already, BUT he ate a vegetable and ate ALL of it. Boys never grow up, I’m still proud when he eats all the vegetables I put on his plate haha.
Slow roasting the cabbage gives it a soft texture (not watery like the polish staple of boiled cabbage) and a caramelized BBQ outer layer that is delicious! I reapplied BBQ sauce several times and doused it with beer while cooking, so the cabbage came out moist, tender AND actually had flavor. I’m sure this recipe could work on a grill too, but I currently can’t test it to find out! Maybe one day I’ll have a backyard? Or more than 500 square feet of living space?
I love a good barbecue! I’ve come to realize that there are so many different types and styles of BBQ. We always just grilled meat and brushed on a premade sauce. But now after trying southern bbq, smoked meats, texas style bbq and the many different regional sauces of the south, I found out that I clearly did not know what good barbecue was before! I had never heard of using just a dry rub, a mustard sauce or even of using a smoker. Those just aren’t popular yet in the northeast but I hope the trend comes up here soon!

BBQ Oven Roasted Cabbage
- 1 Cabbage
- 2 Tbsp Olive Oil
- 1/4 Cup Beer
- 1 Cup BBQ Sauce
- Preheat oven to 400.
- Peel off yellow leaves and trim root.
- Combine olive oil, beer, bbq sauce, salt and pepper. Baste onto the cabbage.
- Place cabbage in oven. Baste every 10-15 minutes and cook until cabbage has softened and BBQ sauce has caramelized.
