A few weeks ago I went to a food blogger conference in Salt Lake City and of course at a food blogger conference, the main focus is the food. The catering at the conference was superb and one of the dishes that I was most excited to try was a watermelon salad. I’ll admit that I was a bit wary of trying a savory watermelon dish but OMG it was sooo good! So when I got home, one of the first recipes I tried was my own Savory Mint Watermelon Salad for Memorial Day.
It went fantastic! This salad is super refreshing and best served chilled. And if you are looking to feed a crowd this is a very easy recipe to satisfy everyone.
This year’s Memorial Day weekend was bit odd for me. For the first time ever I had to work over the weekend and Tai and I didn’t have any plans. The weather didn’t hold so we didn’t end up going to the beach but overall we found some cool things to do in Brooklyn. I’m looking forward to summer so much! It’s the best time to explore the city!
- 1 Small Watermelon
- 1½ Cup Feta Cheese
- 1 Small Red Onion, Sliced
- ½ Cup Mint Leaves, Sliced
- 2 Tsp Pepper
- Cut the rind off of the watermelon and cut meat into cubes. Put into a large bowl.
- Mix in feta cheese, mint and pepper. Slice onion thinly and stir in.
- Let chill before serving, then enjoy!
