It’s that time of year again, Valentine’s Day! Can’t believe it’s my second Valentine’s Day with Tai, which also means we’ve almost been living together for a year.
Ok that sounds all cutesy, but this time last year the struggle was real. We had decided that we wanted to move in together because we were not happy with our current living situations and we seemed to spend more time at each other’s apartment more than our own. But in NYC apartment hunting is considered an extreme sport. It took us THREE months to find an apartment. We had to buckle down and save as much money as we could and make sure our credit was as good as possible. Because the housing market here is so competitive, if you find one you like, you have to put a deposit and hand in paperwork immediately after seeing it. Or it’s gone to someone else.
Tai had given notice to his landlord that he was moving out on March 1st and I had a subletter set to move into my room, but we still hadn’t found a new apartment. So on Valentine’s day we spent the whole day looking at apartments in Brooklyn. We saw about 8 and hated every single one. I was freaking out. OCD, control freak me, was having an anxiety attack because that left us less than two weeks to find a place, find a moving company and pack up everything!!!
I went home to get ready for dinner. We decided to go to Les Halles, where Anthony Bourdain found fame when writing his hit book Kitchen Confidential. As I was getting ready, Tai was waiting by the restaurant and calling every broker he could reach at 7pm on Valentine’s Day. He set up 6 appointments for the following day and we found our apartment from one of his blind calls that night. I don’t know how we would have moved on time without him doing that. That’s one of the many reasons why I love him, when it’s crunch time and I’m freaking out, he takes on the problem and solves it with ease.
So to commemorate Valentine’s Day, I decided to make a Double Chocolate Hazelnut Cookie, which combines some of our favorite flavors and of course, chocolate. It’s airy and soft and fudgy all at the same time. These are just oh so good. And I know because Tai already ate half of them 😉
I hope this year will be a less stressful Valentine’s Day than our first one, and I’m sure the food will yet again be amazing.
- 2¼ Cups Flour
- 1 Tsp Salt
- 1 Tsp Baking Soda
- ½ Cup Cocoa Powder
- 2 Sticks Softened Butter
- 1½ Cups Sugar
- 2 Eggs
- 1 Tbsp Vanilla
- 1 Cup Chocolate Chips
- 1 Cup Chopped Hazelnuts
- Preheat oven to 375.
- In a small bowl, combine flour, salt, baking soda, and cocoa powder.
- In a large mixing bowl cream butter and sugar. Add eggs and vanilla. Mix until combined.
- Gradually add add flour mixture to the wet mixture and mix until just combined.
- Stir in chocolate chips and chopped hazelnuts.
- Drop dough by the spoonful onto a greased cookie sheet and bake for about 12 minutes.
- Let cool, then enjoy!
